Creating Flavors You’ll Love With Ingredients You Can Pronounce!
Ingredients you need:

1 package El Capitán Chorizo
2 cup raw cashews, soaked overnight & rinsed thoroughly
1 cup water
2 tbsp vegan butter
2 clove garlic -
2 medium onion, medium dice
2 jalapeño, small dice
1 tsp smoked paprika
1 tsp chili powder
1 tsp cumin powder
1 tsp mustard powder -
2 tsp salt
1 tsp ground black pepper
1 cup non-dairy milk
1/2 cup nutritional yeast
1 bunch cilantro, chopped
The how-to:
1. Cover cashews with water and soak overnight. Once soaked, strain and rinse.
2. Place cashews in blender and add water, increasing speed gradually. Blend on high for 2 minutes or until completely smooth and creamy.
3. Saute onion, garlic, and jalapeño in v. butter until onions are transparent.
4. Reduce heat to low. Add smoked paprika, chili powder, cumin, mustard powder, S&P. Stir until spices are aromatic.
5. Add cashew cream, non-dairy milk, & nutritional yeast.
6. Cook on low, stirring frequently until heated through.
7. In a non-stick or cast iron pan, sear the chorizo in oil until crispy. Do not stir frequently to get the best crisp!
8. Transfer queso to a serving bowl, top with cilantro and queso. Serve with tortilla chips.
